Coconut Crusted Chicken Fingers

Coconut all day every day!! I just cant get enough of it lately! With these chicken fingers you can have the fun of finger foods but still keep it healthy and balanced.

I used organic chicken tenders, organic coconut flour, adobo seasoning and egg whites.

First I filled two plates, one with coconut flour and another with raw egg whites.

I mixed coconut flour with the adobe seasoning and nutritional yeast. Make sure its super blended together.

Next dip the chicken front and back into the egg whites then dip thoroughly into the dry mixture.

So heres the thing, I have a habit of making things extra healthy but these would have been MAJOR if they were browned in a skillet with avocado oil. But here is what I did:

Preheat the oven to 375 degrees.

Spray your pan with an oil of your choice, I used a coconut oil spray, who would have thought. Bake chicken for 15-20 minutes, depending on the thickness of your chicken. Plate and grab your favorite dipping sauce!!


1 package of raw chicken tenders

1 tbsp nutritional yeast

3 tbsp coconut flour

1/2 - 1 tbsp adobo

2 tbsp egg whites

Coating of coconut oil spray
